Plant Power, the Encinitas-based vegan fast food chain, has opened its second college campus location at the University of California San Diego. The new post is at the North Torrey Pines Living and Learning Neighborhood development and marks the ninth restaurant currently open for the company.
“Today’s Generation Z comprise the most highly educated college students in history,” said Mitch Wallis, co-founder and co-CEO of Plant Power. “It’s only natural that they would demand a plant-based, sustainable, and cruelty free diet which has proven to be best for both human health and our ecosystem and we’re thrilled to have a location at this world class university.”
Over 2,000 residents live in North Torrey Pines Living and Learning Neighborhood. The Plant Power location there features indoor and outdoor dining, mobile ordering and pick up and will offer third party delivery via Uber Eats and Postmates.
Plant Power Fast Food has experienced rapid growth since being founded in 2016.
“We are on track to our goal of 15 restaurants by the close of 2022,” said Jeffrey Harris, co-founder and co-CEO.
The Company opened in Sacramento in May of this year and has six new locations in active development including its first location outside of California in Las Vegas, Hollywood near the Paramount Studios, San Clemente and in the Carmel Mountain area of San Diego.
