A new local brewery in Old Town is jumping on the kombucha bandwagon, opening a tasting room in San Diego where the fizzy beverage is brewed.

Founded by medical device and food industry veterans James Farnworth and Susan McMillon, the brewery, called Bootstrap Kombucha, makes non-alcoholic fermented tea better known as kombucha.

Kombucha is today’s trendy beverage of choice for the fast-growing crowd of health-conscious consumers. The beverage has a distinct and almost addictive flavor, and has been touted to aid in digestion, detoxify the body, and generally do good things for gut health.

“We’ve always thoroughly enjoyed kombucha, and after experiencing the numerous health benefits and enjoying how it makes us feel we knew we had to find a way to brew it more often and share our enthusiasm with the rest of San Diego,” McMillon said in a news release.

Bootstrap’s products come in a variety of flavors such as blueberry, cherry, beet apple-ginger and pineapple passionfruit.

Bootstrap Kombucha is not the only kombucha brewer in town, but Chula Vista-based Boochcraft, founded in 2014, make a kombucha beverage that’s a touch more boozy.

Kombucha is naturally alcoholic, but most kombucha (including Bootstrap’s version) is less than 1 percent. Boochcraft’s products, in contrast, are as potent as the average craft beer, boasting an IPA-like alcohol by volume of 7 percent.

Bootstrap Kombucha’s non-alcoholic beverage can now be found on tap throughout San Diego at local restaurants, as well as their own tasting room located at 4085 Pacific Highway, Suite 105B, San Diego, CA 92110.
